My mom's a wonderful cook, if someone asked me what my favorite Vietnamese place to eat is at, I'd say momma's! This is a meal that reminds me of home. [=

[Fried Fish] Ca Chien:

3 catfish fillets or a tray catfish nuggets [can be found at your local grocery store]
1 1/2 cup corn starch
1 tsp salt
1 tsp pepper
1 1/2 tbs minced garlic

Fillets are the easiest fish to use if you are a noob trying to make a great meal using fish!

Cut up catfish into chunks set aside.
combine corn starch, garlic, salt and pepper in a bowl. mix well
then add fish, coat it.

start the oil on high heat, then as it heats up turn it down to medium.
fry the fish until golden brown :)

Awesome Fish sauce! (super duper good with fried fish)
3 red chili peppers
4 tbs sugar
2 tbp minced garlic
1/4 -1/2 lime (flavor to taste)
5+ shots of fish sauce (flavor to taste)
1 tsp ground chili pepper
[NO WATER]

add sugar, garlic and sliced chili peppers.. pound it. then add lime, ground chili peppers, and nuoc mam. the consistency is thicker than normal fish sauce due to the sugar.
this you really have to just see what you like.

mine has a hint of sweetness with a massive kick of spicyness :D

great with fried fish!

yum
